A Healthy Before or After-Dinner Cocktail
It is best to drink Kombucha in approximately 100 mL portions either before or after a meal, preferably 20 minutes before eating. Kombucha can prepare for or aid in digestion. It is a nice alternative to alcoholic drinks, beer and Champagne... a real toast to your health!
Detoxification
Warning: For Kombucha novices, it is a good idea to enjoy it in moderation. Drinking large amounts of this tea can trigger a sort of extreme system purification, and you might experience some detox symptoms. Don't worry!
Stimulating Tea
Remember that Kombucha contains tea, be it white, black or green, all of which are stimulants. Thus, it is better not to drink it before going to bed.
0.5 Proof Alcohol
During the fermentation stage, yeast breaks down sugars producing alcohol. Next, bacteria synthesize the enzymes and other organic acids with this alcohol. When it comes time to bottle the Kombucha, only 0.5 proof alcohol is left, just like some vinegars and strong apple ciders. Depending on how sensitive you are, you could experience a slight effect.
